RSVP Collection No. 35 - Cucumber Salad



Cucumber Salad

  • 2 English cucumbers (2 pounds)
  • 1 small red onion
  • 1 1/2 tablespoons salt
  • 1 tablespoon plus 1 teaspoon white wine vinegar or sherry vinegar
  • 1 teaspoon sugar
  • 2 teaspoons dried dill or 2 tablespoons fresh

Directions

Slice the cucumber lengthwise, remove the seeds, and slice thinly. Thinly slice the onion.
In a colander, toss the cucumber and onion with the salt and let it sit and drain for 20 minutes. Press the liquid out of the vegetables and rinse well with cold water.
In a medium bowl combine the vinegar and sugar and stir well. Add the cucumber mixture and toss to coat. Stir in the dill.

Sort of missing the need to come up with summer projects like I used to for my kids when they were younger. This one would have been a fun one.  I have this book on my shelf and have only admired these projects, yet to attempt any of them.

Garden Design No. 12 - Rooftop Garden


I love escapes. Escapes from the day that kicks your butt, escapes from drama, escapes from the to-do list, escapes from everyone except those that you love.  But what I love most is that one can create their escape anywhere they like.

Rooftop gardens are the ultimate escape.



Seriously, how difficult would it be to not lean over this rooftop and say "neena neena boo boo!"
